Chocorange muffins


2 1/2 C organic flour
5 tsp organic baking powder
1/2 C organic cocoa
1/4 C raw sugar
1 T grated orange rind
2 eggs
1/2 C fresh squeezed orange juice
50g butter
1 1/4 C whole milk (non-homogenised)


Sift flour, baking powder and cocoa into a bowl. Mix in sugar. Make a well in centre of dry ingredients. Lightly beat rind, eggs and juice together. Melt butter. Pour egg mixture, milk and butter into dry ingredients. Mix quickly to just combine. Three quarters fill greased muffin trays with mixture. Bake at 190 degrees for 12 to 15 mins or until muffins spring back when lightly touched.
