MAYONNAISE

ingredients

    MAYONNAISE

1 egg yolk or 1 whole egg at room temperature
½ teaspoon salt
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 cup extra virgin olive oil

HERBED MAYONNAISE   

1 cup mayonnaise
¼ cup chopped herbs- Italian parsley, chives and basil or you can use which ever herbs you prefer.

method

In a food processor or blender mix egg yolk or whole egg, salt, mustard and lemon juice. Slowly add oil drop by drop, taste and check seasoning. If it is too thick more lemon juice can be added.

 

Note: traditionally mayonnaise is made with egg yolk only. Olive oil must be added slowly otherwise it will not thicken.
