800gms of stewing beef
3 tablespoons organic flour
3 tablespoons lard or dripping
10 whole peeled pickling onions
2 cloves chopped garlic
1 cup red wine
2 cups beef stock
1 cup chopped mushrooms
2 carrots sliced
Several sprigs thyme
Bay leaf x 2


  1. Placedripping or lard in a flameproof casserole dish, add diced beef and onions and brown, add garlic then stir in flour.
  2. Slowly add red wine then add 2 cups of beef stock
  3. Add mushrooms and carrots along with thyme and bay leaf.
  4. Cover and cook at 180 degrees Celsius for 1 ½ hours or until meat is tender. Check during cooking you may need to add a little water and give a stir.
Remove thyme and bay leaf, serve.
