BEEF ENCHILADAS

ingredients

1kg prime minced beef

6-8 wraps organic pref`

1 onion diced

2 cloved of crushed garlic

1 red capsicum diced

2 carrots grated

1 courgette grated

1 tablespoon cumin

1 tablespoon corriander

1 teaspoon chilli powder

8 tomatoes diced- skin can be left on.

grated cheese

1 avocado


method

Place mince into a frypan along with onion and garlic, saute for a few minutes.

Note: there should be enough juices from the mince to prevent sticking.

Next add capsicum, carrot, courgette, cumin, corriander, chilli powder and 4 of the diced tomatoes. Simmer until all is cooked.

Grease a dish and place mince mixture into each wrap (home made pref) and roll up. Add remaining diced tomatoes then sprinkle with cheese and bake at 180 degrees celcius until nicley glazed.

Sprinkle diced avocado on top.
