FLO'S ROXBURGH RICE

ingredients

  • 3/4 C long grain rice
  • 4 shallots
  • 2 tbsp ginger, chopped
  • 1/2 C sultanas
  • 1 stick celery
  • 2 tbsp dried apricots (pref organic, sulphite free)
  • 1/2 C pine nuts
  • 1/2 C walnuts

Dressing:

  • 1/4 C squeezed fresh orange juice
  • 1 clove crushed garlic
  • 2 tsp honey
  • t tbsp olive oil
  • 1 tsp fresh ginger, grated
  • 1 tsp lemon juice

method

Cook rice and cool. Toast pine nuts 5 to 8 mins.
Toss with dressing and regrigerate for several hours.

Dressing:

Shake the ingredients well in a jar.
