- 1 Whole pumpkin peeled and chopped
- Lard or dripping
- 2 onions chopped roughly
- 4 cloves garlic peeled
- 1 leek chopped
- 2 carrots peeled & chopped
- 2 large potatoes peeled & chopped
- 2 cups chicken stock
- 2-3 cups water
- Full fat yoghurt (optional)
In a saucepan melt lard add onions, garlic and leeks and saute until well browned as this will add great flavour to the soup. Now add all remaining ingredients and simmer until all cooked then place in food processor or blender.
Return to a clean saucepan, season with salt and pepper, bring to the boil and serve with a dollop of yoghurt if desired.
Soup can be frozen and pulled out when required
