QUICHE LORRAINE AND COLESLAW
- 8 sheets filo pastry (pref home made)
- Melted butter
- 5 eggs
- 250-300 mls cream
- ½ onion finely chopped
- 1 clove garlic chopped
- 1 tomato diced
- 4-5 rashers bacon from your local butcher diced (naturally cured)
- ½ cup grated cheese
- 2 tablespoons chopped parsley
- ¼ cabbage shredded
- ½ red onion finely diced
- Enough homemade mayonnaise to bind
- Salt and pepper
Grease a flan or quiche dish with melted butter. Brush each sheet of filo pastry with butter until you have used all 8 sheets and line dish.
In a bowl beat eggs and cream, add onions, garlic, tomato, bacon, cheese and parsley add seasoning.
Pour mixture into flan dish and bake at 180 degrees Celsius for 30-40 mins
1.Mix all ingredients together and serve.
2.Also pumpkin or sunflower seeds are nice added to coleslaw.
