SALMON ON A VEGETABLE MEDLEY
- 2 salmon steaks or fillets
- Lard or dripping
- 3-4 medium sized pre cooked potatoes
- 1 cup of diced pre cooked pumpkin
- Beans pre blanched
- 1/2 a capsicum cut into strips
- 10 cherry tomatoes halved
1. In one pan saute the potatoes and pumpkin in the lard and meanwhile in another pan fry the salmon.
2. Add to the potatoes and pumpkin the capsicum, beans and tomatoes and saute until all cooked and heated through. Serve.
