STUFFED CHICKEN

ingredients

  • 2 chicken breasts
  • 6 sundried tomatoes chopped
  • 4 slices brie cheese
  • Lard or dripping
  • 2-3 carrots
  • 2 tablespoons honey
  • Frozen corn
  • Pre boiled potatoes
  • 1 teaspoon crushed garlic
  • ¼ red onion sliced
  • ¼ red capsicum sliced

method

1. Make a slit in each chicken breast and stuff with sundried tomatoes and cheese, brown in a pan with lard and then bake in the oven until cooked

2. Place all at once into a pan the following melted lard, garlic, onion, capsicum and sliced pre cooked potatoes or left over cold potatoes from the night before. I cook extras the night before.

3. Peel carrots then using the peeler make strips, steam and then stir through honey.

Heat corn and serve.
