• 1 x 440gm tin cream style sweet corn (preservative free)
  • ¾ c organic flour
  • 1 teaspoon baking powder (pref organic)
  • 1 egg
  • Salt and pepper
  • Butter


1. In a bowl sift flour and baking powder, add egg and sweet corn, and stir until combined.

2. Season batter. Melt butter in a pan and place spoonfuls of mixture into the pan.

3. Cook until golden then flip and cook other side, drain on kitchen paper.

Serve with sweet chilli sauce and yummy with bacon rashers on the side.
