TOMATO AND BACON PASTA

ingredients

  • 250g spiral pasta
  • 1 onion thinly sliced
  • 400g fresh or canned (preservative free) tomatoes
  • 1/2tsp oregano
  • 15g butter
  • 100g bacon chopped (naturally cured)
  • 1/2 C cream
  • 1tbsp parsley, chopped

method

Cook pasta. Drain. Heat butter, add onion and bacon. Cook, stirring until onion and is lighly browned. Add tomatoes, simmer a short while. Remove from heat, stir in cream, oregano and parsley then pasta.
Heat gently and serve.
