Cathedral Window Cake
3/4 Cup each of currants, sultanas, raisins, chopped dates, chopped almonds and mixed peel (pref organic)
1/2 Cup dried pineapple and dark chocolate (pref organic)
1 tsp mixed spice
1 1/4 Cup Flour (pref organic)
1/4 Cup raw honey. (Davidson`s honey good brand)
Stir flour and spice into dried fruits. Beat eggs and add to dry ingredients with honey. Mix until well combined. Press into sponge roll tin and bake 140 dergrees for 45 mins or until firm. Cut into fingers when cold and store in airtight container.
